A Simple Treat: Peanut Butter and Chocolate

In a desperate moment trying to satisfy my sweet tooth I discovered this low carb treat.  Its great by the spoonful or on apples, and it's really easy. I like easy. Plus the protein of the peanut butter holds my appetite over so I don't have a sugar crash. It's a win/win treat.

I prefer Real butter peanut (especially fresh ground like at Whole Foods or Trader Joe's) because its just nuts, no hydrogenated fats. I also prefer good cocoa powder like Valrhona for rich taste and that dark chocolate color, but use what you can find.  Just mix the cocoa with the peanut butter, and add some honey or Kal's Liquid Stevia for a little extra sweetener if you want.

As a special treat for my son's lunch box, I put the chocolate peanut butter on apples then dipped in sprinkles. The sprinkles are for decoration so the sugar is minimal, but it makes him so happy you'd think I had given him cake.
