Fried Egg and Avocado Salad 

This simple salad works for any meal.  Like all my recipes, natural salt such as Real Salt, makes a huge difference in taste. And natural salts are especially beneficial for those of us with Adrenal Fatigue.

 

SERVES 1 (multiply ingredients as needed)

 

INGREDIENTS

1/4 to 1/2 Avocado, sliced

3-4 Leaves Romaine Lettuce

2 Eggs (Omega 3, or Free Range are preferable)

Sliced Almonds

Chives or Scallions (optional)

Butter (use the real stuff)

Salt and Pepper to taste

 

DIRECTIONS

Melt Butter over medium high heat until butter foam subsidees.  Add eggs and fry to desired doneness.  To cook the top of the egg cover the pan rather than flipping egg, it makes the texture better.

Wash and tear lettuce into desired sized pieces. Top with avocado and almonds, then add fried eggs. Chop chives or scallions  and sprinkle over eggs to make it pretty.  Season with Salt and Pepper.

Viola! A simple meal, ready in 10 minutes.
